Salmon & Pickled Radish Toast

Homemade pickled radishes are secretly easy to make and provide the perfect crunch when paired with salty smooth salmon.

Directions
- In a medium bowl, toss radishes with garlic and ½ tsp. dill.
- In a small saucepan heat the sugar, salt, vinegar and water and pickling spice over medium-high heat, until sugar is dissolved, about 2-3 minutes.
- Pour the vinegar mixture over the radish slices and cover tightly with saran wrap. Place in the refrigerator for at least an hour to pickle.
- In a small bowl, whip the cream cheese and remaining ½ tsp. dill on medium speed with a hand mixer until combined.

- 1 cup sliced radishes
- 1 tsp. dill, divided
- 1 clove garlic, thinly sliced
- ¼ Tbsp. sugar
- ½ tsp. salt
- ¼ cup white vinegar
- ⅓ cup water
- ½ Tbsp. pickling spice
- 4 oz cream cheese, softened
- 9 oz salmon nova lox
- 4, ½" thick slices potato bread



- Using the toaster, adjust the browning control to setting 4 and place 2 slices of bread in the toasting slots. Press the lever down fully to begin toasting cycle. Repeat with remaining slices.
- Spread the cream cheese among each toast slice and top with the salmon and pickled radishes.
